Mashed cauliflower & potatoes

One of my favorite healthy foods to hide is cauliflower. Because of its subtle taste and versatile texture, cauliflower can be hidden in many foods, the easiest of which is mashed potatoes. Most people cannot jump right into mashed cauliflower alone, so a 50:50 mixture is a good place to start.


From the family "Brasicaceae" (I don't know how to say that either), cauliflower is related to broccoli, kale, cabbage, brussels sprouts and collard greens. For the long history of cauliflower breeding, see Wikipedia. In one cup of raw cauliflower alone, there is only 25 calories, yet 10% of your daily recommended fiber and over 75% of your daily vitamin C! Bet you didn't think a boring white veggie could help fend off colds, but it's true. It has no fat of course, but also not much protein, which is acceptable. I don't recommend mashed cauliflower alone as a meal. The World'sHealthiestFoods website recommends cruciferous vegetables like cauliflower a minimum of 2-3 times per week. Cauliflower has nutrients that help support the immune system, anti-inflammatory system, and antioxidant systems. It has been linked to some amount of cancer protection, likely because of these protective effects.


Ingredients:
1/2 head of cauliflower
4-5 potatoes
1 1/2 cups stock (chicken, beef, veggie, homemade)
Garlic salt

Step 1: Peel the potatoes, dice them, and cut the cauliflower head into florets.
This is veggie stock I made myself in a slow cooker earlier.
Step 2: Put the stock (or water) into the crock pot and then add in potato and cauliflower.
The cauliflower should break apart easily in your hands.
Leftover scraps of potato and cauliflower will go in the freezer until I have enough to make another batch of vegetable stock.
Step 3: Cook on low 2-3 hours or high 4-5 hours. Mash the potato and cauliflower together, adding any spices or more liquid if needed. You can now serve or doctor however you would normally use mashed potatoes. If you don't tell, no one will even know the difference!

Spiced pork roast & oven-roasted vegetables

This is a satisfying, hearty meal that takes so little effort! I'd been craving pork, and roasted veggies is just the best side dish for anything! I had spontaneously decided to try brussel sprouts because they were on sale. Guess what? They are delicious! Trust me, just try it and you will be amazed you ever lived without them.

Pork rub:
1 tsp cayenne or chipotle powder
1 tsp salt
1 tsp black pepper
1 tsp paprika
2 tbsp garlic powder
2 tbsp dried onion
2-3 pound pork roast
5-10 cloves fresh garlic

Vegetables
1 cup fresh broccoli florets
1 cup cauliflower florets
2 cups brussels sprouts
2 stalks celery, in 1" chunks
3 carrots, in 1" chunks
1 large potato, diced
1 whole red onion & 1 whole white onion, sliced thin
~1/2 cup olive oil
salt & pepper to taste

 Step 1: Cut slices into pork roast and insert one garlic clove into each. Mix spices together, rub over pork roast. Let sit in refrigerator an hour - overnight.

Step 2: Cut all veggies. Mix well in olive oil to coat, sprinkle on seasonings. Spread in a 9x13 baking pan and roast at 350 for about one hour. Cover to keep broccoli & cauliflower from scorching.
Step 3: Bake pork at 350 for at least 1 hour, covered, or until no longer pink. Remove cover and bake another 15 minutes.
Step 4: The pork should be fork-tender and slightly spicy, while the veggies are crispy-soft and slightly sweet. Enjoy the amazing flavors & textures! Leftover pork can be shredded and covered in BBQ sauce for sandwiches the next day.

Mashed potato & cauliflower

I have read about mashed cauliflower several times and never had tried it. Since my grocery store had cauliflower on sale this week, I decided to give it a go. Cauliflower has far less calories than potatoes, and aren't starchy. So you can eat more of this when you mix half and half, and not feel guilty!

Ingredients:
3 small potatoes
1 large head cauliflower, cut into florets
3 tbsp butter or margarine 
1/4 cup milk
Optional: 2-3 green onions
Garlic salt
Large pot of water
Salt 

Step 1: Put several cups of water on the stove to boil, adding salt to make it boil faster. Rinse and dice the potatoes (you can peel them if you don't like the taste, but the peel is where most of the nutrients are so I left mine on.)  Cut up the cauliflower.
Step 2: Boil the potatoes and cauliflower together for 10-15 minutes, until both are easily smashed with a fork.
Step 3: Using a spoon or a mixer, mash the potatoes and cauliflower together. Level of smoothness vs. chunkiness is personal preference, I made mine pretty smooth. Mix in butter or margerine and milk. Add garlic salt to taste.
Step 4: Optional - slice green onions thinly and add for crunch and flavor.
